Hello travelers! We’ve got a treat for you today. We’ve found the most delicious and authentic Jamaican Oxtail recipe for you to try out at home in honor of National Caribbean-American Heritage month. Celebrate with JodyCooking over on her Youtube channel where she is teaching us how to make this Caribbean cuisine. Ingredients

  • 3 to 3 1/2 pounds oxtail
  • 1 small carrot (chopped)
  • 1 1/2 onion (sliced and halved)
  • 1 tomato (chopped)
  • Sweet peppers (yellow, green, and red; julienne)
  • 2 stalk of scallions (chopped)
  • 1 Tsp ginger
  • 2 Tbsp fresh thyme
  • 4 cloves garlic
  • Scotch bonnet pepper (to taste)
  • 1 can butter beans
  • 2 Tsp pimento seed/all spice
  • 1 Tsp browning or dark soya
  • Olive oil
  • 6 to 10 cup hot water
  • 1/2 tsp salt

For Seasoning

  • 1 Tbsp all purpose seasoning
  • 1 Tbsp jerk seasoning
  • 1 Tsp oxtail seasoning
  • 1 Tsp black pepper
  • 1 tsp paprika
